There is a local joke in Mexico that says that all of our food has tortillas, cheese and salsa. For part of it, it may be true.

Mole

A sauce made mainly by chilies, seeds, and chocolate. You eat this sauce with chicken or turkey.

Escamoles

Escamoles are ant eggs cooked with butter and garlic. As weird as it sounds, it is actually amazing.

A typical Mexican plate that has a fatter tortilla then you put beans and chicken with some salsa and cheese.

Chilaquiles

Fried tortillas cut into pieces with salsa (it may be red or green) and you put sour cream and cheese on top.

Aguachile

Aguachile is a mixture of lemon juice, salt, and something spicy and we use this mixture to "cook" some seafood like shrimp.

Gorditas

Tamale

A leaf of corn field with a kind of corn bread, meat (mainly chicken) and chili sauce).
